Like any Seafood Salad Recipe the only limit is your imagination. Don't be afraid to add or take away from the recipe, though it would be a good idea to try it secretly yourself first! MUSSEL AND POTATO SALAD Serves 4 Cooks in 8 minutes Ingredients ½ kg mussel meats 6 small waxy potatoes – cooked and thinly sliced 1 red pepper 1 green pepper } thinly sliced 100g green beans – lightly cooked Mayonnaise or vinaigrette dressing, with a little mussel liquor added Method Combine all the ingredients and toss carefully in mayonnaise or vinaigrette dressing Arrange on a serving dish and chill for half an hour before serving To Serve Sprinkle with chopped coriander and salad leaves .
