Fish Al Fresco

Seafood is an unusual and delicious addition to a summer buffet or picnic party, and a great choice for a snack at lunchtime.

Salmon is a favourite fish for summer time, but instead of serving it with the usual mayonnaise, why not try an avocado dressing?

Just blend avocado flesh with natural yoghurt or cream and add a dash of Tabasco

For tasty finger food, fill vol-au-vent cases with a

mixture of cooked white fish, cottage cheese and chives

Cook small squares of puff pastry. Slit them and spread with

cream cheese and pop in a prawn tail

Make pastry shapes and fill with a quiche mixture, add smoked fish, white fish or shellfish

Club sandwiches with salmon make a refreshing change.

Use shredded lettuce and scallions in one half and cooked flaked salmon in the other.

Mix cooked shelled prawns with a little cocktail sauce.

Mix cooked flaked smoked fish or smoked mackerel with a little mayonnaise.

Arrange lettuce leaves on brown or white rolls, top with smoked fish mixture and garnish with thin slices of red onion.

Summer Salmon

Arrange crisp lettuce leaves on buttered brown bread.

Top with flakes of cooked salmon and garnish with sliced radishes.

Thread oysters and rolls of bacon onto a skewer.

Grill for two minutes each side basting with oil and butter mixture.

Arrange oysters and bacon on toasted baguette and drizzle with remaining sauce.

Mixed Seafood Sandwich

Very lightly bind cooked flaked cod, salmon, smoked fish, prawns and mussels with mayonnaise.

Arrange lettuce leaves on buttered brown rolls, place seafood on top and garnish with chopped parsley.

New Yorker

Arrange slices of smoked salmon and a scoop of cream cheese on bagels.

Sprinkle with chopped chives.

Oyster Po-Boy

Heat butter and olive oil.

Add garlic, parsley, pepper and a squeeze of lemon juice.

Steam some fresh mussels, white white wine and garlic and finish

with a little cream and chopped parsley.

Simply serve in a big bowl and let your guests help themselves.

Grill mussels in the half shell with a topping of garlic butter and breadcrumbs or parmesan and pesto, and serve with lemon wedges.

You can also use these toppings for fresh oysters!

How about mixing a little sweet chilli sauce with mayonnaise or

creme fraiche with fresh lemon, lime juice and zest adding

lashings of freshly chopped coriander.

Serve a selection of fish and shellfish on a large platter in the

middle of the table such as rolls of smoked salmon stuffed with

cream cheese and dill, oysters in the half shell, juicy prawns

with dips, barbecued salmon slices, mouth watering garlic mussels

Prawns are perfect for parties - they can be served hot or cold and are great with dips.
