Seafood Recipes, New England Style Cod and Mussel Chowder



A classic of Seafood Recipes.

New England Style Cod and Mussel Chowder

Serves 4

Ingredients

225g cod fillets skinned or any white fish

450g mussels

50g streaky bacon

1 medium onion

2 medium potatoes

275ml of milk

190 ml water

1 bay leaf Parsley

Olive oil

Method

Cut the fish into 1cm cubes, or bite size pieces

Wash and remove beards if necessary

Chop streaky bacon

Dice the onion, peel and chop potatoes into chunks

Place mussels in a saucepan over medium heat until they open 3-4 minutes - you do not need to add any water

Allow the mussels to cool and remove flesh

Keep the juices and discard the shell

Fry the bacon in a little olive oil until crisp

Add the diced onion

Sweat the onion until they are soft - do not brown

Simmer the potatoes and a bay leaf in water for 8 minutes or until just cooked

Add the cooked onions, bacon and the raw cod to the potatoes and simmer for 4 minutes until the cod is just cooked

Add the mussels and milk, heat through, do not boil

To Serve

Serve with brown bread.
