Seafood Recipes, Seafood Chowder.



In common with many seafood recipes this is a hearty and

nutritious recipe perfect for cold evenings!

Seafood Chowder

Serves 4

Cooks in 20 minutes

Ingredients

450g fish, filleted, skinned & cut into 2cm cubes such as pollock, smoked fish or haddock

500ml milk

4 rashers of rindless smoked bacon

1 large onion, diced

1 small tin sweet corn, drained

Small knob butter

2 large peeled potatoes cut into small cubes

Handful chopped fresh parsley

Salt and pepper

Method

Boil potatoes until soft

Remove one half and mash the other half. Set aside

In a saucepan, melt the butter, and gently fry the onion and bacon

Add sweet corn, potatoes, fish and milk

Stir gently and simmer for four to five minutes

Season to taste

Serve in scooped out sourdough bread & sprinkled with chopped parsley.
