Roast Beef Recipe, Pot Roast.



The following roast beef recipe is very much a standard one but it has its place.

BEEF POT ROAST INGREDIENTS ( for 6 )

Ingredients

3lb of braising beef 1.4kg

1 large onion

2 large carrots

2 stalks of celery

1 garlic clove

few sprigs of parsley

3 bay leaves

few sprigs of thyme

salt and pepper

half pint of decent red wine 300ml

half pint of hot beef stock 300ml

2 tsp of cornflour

This pot roast beef recipe takes about 85 minutes to cook excluding the time needed for marinading.

Method

Put the braising beef in a large casserole dish. Peel and slice the onions,carrots. Peel and crush the garlic. Add all these to the beef along with the salt, pepper, wine and the stock.

Now cover the dish and leave to marinade for about 3 hours or for super rich taste and super tender beef leave it marinading over night.

When ready to cook heat on high for 10 minutes then on simmer for roughly 70 minutes. Turn the beef twice during this part.

To serve, remove the beef from the juices and strain the vegetables. Wrap the beef in tin-foil shiny side in. Mix the cornflour with a little cold water and add to the juices. Cook this on a high heat for 5 minutes, stirring once.

Now that the beef has settled it will be easy to slice. Place the slices on a serving plate along with the vegetables.Put the gravy in a sauceboat and serve seperately.

We eat this with COLCANNON for a truly comforting, melt in the mouth meal. Of course you can serve it whatever way it suits you but the basic beef roast recipe as given will always serve you well.
