Roast Beef Recipe Boxty

This roast beef recipe,Boxty might be frowned upon by the purists as the boxty may be viewed as the only traditional Irish food or they might say this beef recipe is not Irish cooking.But I'm pretty sure our fondness for beef extends quite a way back, anyhow that's my excuse and I'm sticking to it.

This beef recipe is beautiful in taste but also in simplicity.

You might notice that roast potatoes keep appearing, not just on these roast beef recipes but on other recipes on this site. Feel free to ignore them, it is a quirk of this household that 'roasties' keep appearing on the menus.

Fillet Steak and Boxty

Depending on how many mouths you have to feed of course, i have given this roast beef recipe for two people.

My wife and i would eat this in the evening if the house was quiet and we had a little time to ourselves. Absolutely gorgeous with a nice bottle of cab/sav.

Ingredients

2 fillet steaks about 1 inch thick

olive oil

salt and pepper

1 large onion

5/6 potatoes

3 spring onions

1 egg yolk

half cup plain flour

butter

How to prepare the Boxty.

Place potatoes in a pan of cold water and bring to the boil and simmer for approx. 20 minutes or until tender when prodded with a sharp knife.

Drain off and leave to cool.

Peel the spuds when cooled and grate into a bowl. Chop the spring onions and fry in a warm pan that has been seasoned with a little olive oil, salt and pepper, until softened.

When the spring onions are nicely softened empty them into the grated potato along with the egg yolk and sprinkle in the flour. Mix well and then shape into 1 inch thick patties, leave to chill in fridge for an hour or so.

HAVE A GLASS OF WINE.

After the hour or so when the boxty has firmed up a little or you can't wait any longer,whichever comes first, warm a heavy skillet pan. Season the pan with a little olive oil, pepper and salt. Just as the pan starts to smoke place in you fillet steak.

Sear each steak on both sides for approx. 30 second, reduce heat and cook for about 4 minutes either side, depending on how you like your steak of course.

When the steak is ready remove it and let it settle. While it is settling add a small knob of butter to the pan, add the boxty and heat for about 3 minutes either side on a reduced heat.

Serve with a nice crisp salad and nice wine and there you are. A nice, tasty,intimate meal for two ( if you can get rid of everyone else that is! ) ENJOY
