Pollock Fish Recipes, Pollock in Foil



Two Pollock Fish Recipes here and don't forget, Pollock can easily be used with Cod or Haddock Recipes.
Pollock Fish in Foil

Serves: 4

Preparation time: 10 minutes

Cooking time: 15 minutes

Ingredients

800 g (1 lb) pollock

250 g (9 oz) brown mushrooms, sliced

2 medium-sized, coarsely chopped onions

Salt and freshly ground pepper

4 thin slices of lemon

4 sprigs of dill

50 g (2 oz) butter

Method

Divide the pollock into 4 pieces.

Grease 4 pieces of aluminium foil with butter, and on these place the mushrooms slices, the chopped onion and pieces of fish.

Sprinkle with salt and pepper.

Decorate the fish with lemon slices and dill sprigs.

Divide the butter between the four pieces of fish.

Pack the foil tightly around the fish and vegetables so that no moisture can escape.

Put the aluminium foil 'parcels' on a baking tray and cook the fish in the middle of the oven.

Accompaniment: Boiled potatoes

Baking time: Approximately 15 minutes at 225°C (425°F / Gas 7).


Baked Pollock Fish

The thicker pollock fillets are ideal for baking as their firm flesh ensures they hold together well.

Top a fillet with a bay leaf, season with a grind or two of black pepper, then wrap in a couple of slices of parma ham.

Drizzle over a little olive oil and bake in a hot oven 200C/gas 6 for 15-20 minutes.

This is great served alongside lightly buttered new potatoes and a crisp green salad.
