Lamb Recipes, Roast Rack of Lamb Chops.





Lamb Recipes like this are extremely handy with a very

short preparation and cooking time.

That's priceless in any kitchen

ROAST LAMB RACK

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients

small rack of lamb (4 cutlets)

freshly ground black pepper

2 tsp olive oil

200g/8oz new potatoes, halved

255ml/9fl oz red wine

1 shallot, peeled and finely sliced

30g/1oz unsalted butter

Method

Preheat the oven to 220C/425F/Gas 7.

Preheat a griddle pan over a medium-high heat.

Rub the black pepper into the lamb rack, and then wrap the lamb bones in tin foil to stop them from charring.

Cook the lamb in the griddle pan with a teaspoon of the olive oil for a few minutes on each side to colour.

Transfer to the oven and cook for approximately 10-12 minutes or until cooked through.

Heat the remaining olive oil in a separate griddle pan and griddle the potatoes for 4-5 minutes on each side.

Transfer to the oven and cook until soft.

Heat the red wine and shallot in a small frying pan and simmer for 7-8 minutes, or until reduced.

Add the butter and swirl through.

Remove from the heat.

To serve, remove the lamb from the oven and transfer to a serving plate.

Drizzle the red wine reduction over and serve the new potatoes alongside.
