IRISH FOOD is the bounty of a nation rich in foods finest ingredients.

Fish, Lamb, Poultry, Beef, Pork, Game, Seafood,Fresh Vegetables, Bread and even Irish beverages all with a dash of genius and a large pinch of individuality.

The perception that Irish Cuisine,whether it is traditional or modern, consists solely of bacon and cabbage really is so far off the mark.

Is Irish Food traditional or modern?

To us it is what we grew up with, to our children it is what they are now growing up with.

Food, no matter what part of the world it comes from, is constantly evolving.

In further generations our food will have absorbed the influences of the very welcome migrants from eastern Europe and further afield. Just as the Irish and Irish cuisine influenced their new communities when they spread their wings.

Traditions evolve, they just do not emerge from nowhere.

Will traditional Irish recipes fade away? No, we don't think so because as we said earlier traditions evolve.

We use a cookbook that was given to my mother-in-law on her wedding day and which she passed on to her daughter. The recipes are often used straight from the book and equally as often they are modified a little.

The passing of recipes, not just Irish recipes is a long tradition, as long as our past and as long as our future.

Irish food and Irish cooking will always be traditional,always modern and always evolving. It cannot be any other way, we all add to it in some way.Food and the way that it is prepared is always undergoing change, indeed in Ireland at the moment there is something of a movement back to the slow food method of coking Irish food.

Irish Food in it's truest sense is part of what we are, who we are and where we come from. It is us.

Yes certainly there are lamb and mutton stews, boiled pork, creamy salted butter, rich cheeses and the ever-present potato.

Simple meat dishes with minimal sauces that make use of Ireland's quality beef, lamb and pork produce are still there and rightly so.

However Irish Cooking is changing somewhat as Ireland enjoys financial prosperity and the influence of new cultures.

Modern Irish cuisine really is an eclectic mix,as you will discover with the recipes from these modern Irish chefs such as Darina Allen, Paul and Jeanne Rankin, Rachel Allen, Kevin Dundon, Richard Corrigan,Clodagh McKenna have been updating Irish ingredients with a global influence.

That is not to say however that they do not pay homage to traditional Irish recipes. They certainly do!

We will dedicate a section just to traditional Irish recipes. These recipes will be the older style , with fewer ingredients and certainly less fancy ingredients.

Ordinary Irish people just would not have had access to those never mind being able to afford them. By the way, contrary to perception, alcohol did not play a large part in these recipes.
