Irish Cooking has always had rich, natural source of fish and shellfish, lamb, cheeses, beef etc.

Unfortunately however at times the cooking of these ingredients, the finest that a lush island nation could offer up, more often than not cooked in such a manner that it did scant justice to the quality of the ingredients.

There were of course exceptions but in general that was the style and because of it Irish cuisine gained a reputation that no style of cooking would desire, often dismissed as no more than fit for cooking stew, which in itself did the image of the traditional Irish stew no favours.

Of course the dominance of the potato in Irish cooking recipes also played a significant role. The exact reasons for this dependance on the potato is best left to others more knowledgeable on the subject. Suffice to say that this dependence by majority of the population on the spud was not optional!

Thankfully however events have moved on and a new confident,stylish Irish Food scene has emerged within the last 15 years.

Ireland has since evolved into one of the premier culinary centers of Europe and is home to an ever-growing specialty food industry.

Irish Cuisine is using the country’s traditional ingredients in unique new styles while staying true to the country’s heritage.

Brilliant chefs like Rachel Allen, Kevin Dundon,Darina Allen,Richard Corrigan,Clodagh McKenna,Jeanne

and Paul Rankin and some of the slightly more mature vintage such as

Myrtle Allen,Darina Allen,Monica Sheridan and many more have

ensured that the days when this nation's cuisine was synonymous with potatoes and cabbage and poor cooking methods are now long gone.
