Baked Fish Recipes,Irish recipes




The beauty of Baked Fish Recipes is that one type of fish can easily be substituted for another.Irish recipes often change one fish for another.

Baked Fish in a Courgette and Tomato Sauce

Ingredients

1 tsp Olive oil

60g onion, chopped

1 courgette, diced

200g Tomatoes, chopped

pinch dried basil

pinch Oregano

1 fillet white fish

new potatoes

Method

Preheat the oven to 220C/Gas 7.

Heat the oil in a non-stick pan and cook the onion until softened.

Add the courgette and cook for a couple of minutes.

Stir in the tomatoes and the herbs and mix well.

Pour into an oven-proof casserole dish and put the fish fillet on top of the sauce. Cover tightly with foil and bake 30 minutes or until the fish flakes easily.

Serve with boiled baby potatoes.
