Baileys Irish Cream Recipes for Desserts

Again, because of the popularity of this marvellous Irish drink there are many,many recipes for Irish Cream Desserts. We will start off with two of the better known dessert recipes. At this stage it is one of the most common Irish dessert recipes, and understandably so , because it is the better for using Baileys Irish Cream.

Baileys Irish Cream Recipes, cheesecake recipe

Only one word to describe this Baileys Irish Cream cheesecake recipe. HEAVENLY!

This Baileys cheesecake recipe will serve approx. 10 people. Well not really, everyone will want it to themselves.

Ingredients

For the crumb crust

8 digestive biscuits or gingersnaps

3 tablespoons of unsalted butter

For the filling

8 ounce packet of cream cheese at room temperature

1 cup of confectioners sugar

2 cups of heavy whipping cream

3/4 cup(or to your own taste)Baileys Irish Cream

1/4 ounce envelope of unflavoured gelatin

1 cup of boiling water

1.To make the crust

Preheat the oven to 350°F.

In a small bowl, combine the crumbs and melted butter.

Press the crumb mixture onto the bottom and up around the sides of a 9-inch round springform pan.

Bake for 8 to 10 minutes, or until lightly browned.

Remove from the oven and let cool on a wire rack.

2.To make the filling

In a large bowl, combine the cream cheese and confectioners' sugar and beat until smooth with an electric mixer.

Add the cream and beat for 3 to 4 minutes, or until smooth.

Stir in the Baileys.

In a small bowl, combine the gelatin and boiling water.

Stir until the gelatin is completely dissolved, about 5 minutes.

Stir the gelatin into the cream cheese mixture.

Pour the filling over the biscuit crust.

Refrigerate for 3 to 4 hours, or until firm.

Baileys Irish Cream Recipes, Fudge Recipe

This is one of many variations on an Irish Cream Fudge Recipe.

You could use a mixture of dark and white chocolate,add nuts or heaven forbid use something other than Baileys Irish Cream.

Ingredients

4 cups chocolate chips

3 cups powdered sugar

1/4 cup butter

1 cup Baileys Irish Cream

For the topping

1 1/2 cups chocolate chips

4 tablespoons Baileys Irish Cream

2 tablespoons of unsalted butter

Method for fudge

1. 1/3 fill a large pan with water and bring to boil

2. Place a large bowl in boiling water.

3. Melt the chocolate and butter together in this bowl

until well mixed and smooth.

4. Now add this mixture to the sugar along with the Baileys

5. Mix well until smooth.

6. When mixture is smooth place it in a buttered 8" x 8" pan

For the topping

1. Melt the chocolate as previous and remove from heat.

2. Now mix this chocolate,the butter and the Baileys until smooth.

3. Spread this mixture over the fudge and smooth out as much as possible.

4. Refrigerate until firm, about 2 hours

5.Cut both horizontally and vertically but bear in mind smaller pieces are probably better as it really is a rich fudge.
